Peter prides himself on the fact that his products are handmade, in accordance with old Italian recipes while commercial vinegars are made with additives and preservatives, Star Anis vinegars are not.

In his heart Peter is still a chef and to him taste, quality and presentation are paramount. He still wishes to maintain personal control over his products, and continue doing what he loves best, giving people pleasure in food.
